My family has always been big lovers of pancakes. Regular pancakes, Swedish, French and the delicious Dutch Baby have all been part of the breakfast scene around here.
At some point I simply got tired of buying boxed pancake mixes and decided to come up with a basic mix that I could embellish in a number of different ways.
Here's the basic mixture:
Pancake Mix
6 cups all purpose flour
8 tsp. sugar
8 tsp. baking powder
2 tsp. baking soda
2 tsp. salt
Mix all ingredient well and store in an airtight container.
Pancake Recipe (Serves 3-4)
1-1/2 cups pancake mix
1-1/2 cups milk
2 eggs
2 TBSP. cooking oil
Mix all ingredients well. Melt some butter or oil in a frying pan and add the pancake
batter 1/4 to 1/2 cup at a time. Use less milk if you desire a thicker pancake, more
milk for a thinner pancake.
Variations:
1 tsp. vanilla for more flavor
sliced bananas and nuts
blueberries
coconut and pecans
cinnamon and nutmeg
cinnamon and sliced apples
chocolate chips
Give this mixture a try and see what you think. I'd love to hear of some other flavor combinations.

I AM DROOLING!! Its funny how everyone elses food sounds so much better than mine tastes!!! LOL
My daughter wanted pancakes one Saturday morning and we were out of the box mix and I wasn't getting dressed to go out to get more. I pulled the trusty Betty Crocker cookbook (the one from the 60's) and found the pancake recipe. I told her if she wanted pancakes, she needed to make them from scratch "just like the olden times". They were perfect and she loved making them.
Yummm...now I'm starving :)

I have been looking for a good pancake recipe, I will definately give this one a try. My grand daughter likes pancakes and its a 'tradition' to have them here.
I once read that the eggs used in mixes that you buy are the ones that are cracked and really aren't good for you, this will get me using our own farm fresh eggs!

Pancakes are the absolute favorite around here. My children want them every Saturday morning and love to eat them for dinner sometimes as well. Thanks for sharing this. I always make them from scratch but I will have to try this recipe as well. Have a great day!

Oh, thank you so much for posting a pancake mix recipe!! I have been wanting to find a good recipe so that I can quit buying the box kind....although Krusteaz pancakes are really good. Anyway, I like to add cinnamon to my mix and the last time I made pancakes I added pecans to them too! They were pretty tasty and very filling.
I make my own mix, too.
Mix
2 c. white flour
2 c. wheat flour
3 t. baking powder
2 t. baking soda
1 t. salt
Pancakes
2 c. mix
2 c. dairy (milk, buttermilk, plain yogurt, sour cream or any combination of those)
4 eggs
Flavor Variations
*Chocolate chips (sprinkled on top)
*Diced peaches
*Blueberries
*2-3 overripe bananas mashed and added to mix
*Grated apple with or without a little cinnamon
My guys also like a blender pancake they call "Wonder Cakes" but which the Egg Council calls "Eggstraordinary Pancakes". Another favorite around here is pumpkin ginger pancakes, also from scratch, but not using the standard mix.
I am famous for my pancakes, but I think I'll have to give your mix a try.
I forgot, you can also add a few tablespoons of wheat germ, flax seed, ground flax seed, and/or nutritional yeast flakes just before making the pancakes. They add a little extra nutrition and give the pancakes a mild almost nutty flavor.
I use eggnog in place of milk during the holidays. Yum!
I used to cook in the morning, now I don't. I just can't stand the heat in the kitchen in the morning. It has revolutionized my families life, they learned to cook!

I didn't even know you could buy pancake mix. I thought everyone mixed their own. I must be a real olden times person. I use flour, plain for crepe type pancakes or self-raising for little fat pancakes, a pinch of salt, 1 or 2 eggs depending on how much flour and milk or water and milk to make a batter of the thickness required. Variation and sweetness comes from the filling put on top of the pancakes. The only difficulty is making enough to feed my hungry boys.
