German Oven Baked Apple Pancake

Are you ready to learn how to make a German pancake? This is the pancake that takes up to 45 minutes to appear at your table in a pancake house. There was one on the menu last weekend that claimed it fed 2-3 people and it was $13.99. I can assure you that our version will not cost that much.

First peel, core and slice the apples.



I've used three Gala variety. Only two are shown but it didn't seem like enough so I peeled an additional apple. This is somewhat a "seat of your pants" recipe because you can play around with the number of apples and the amount of cinnamon, butter and sugar.


This cutting board has seen plenty of use over the past 20 years.

Melt your butter in a heavy iron skillet. This heats up perfectly to make a nice caramelized bottom.



Add the apples and fry for about 5 minutes to soften.



While the apples are frying, mix together 3 eggs, 1/2 cup flour and 1/2 cup milk. Beat until well blended.



Add cinnamon and sugar to the apples and stir well to combine.



Pour the batter over the apple, cinnamon and sugar mixture.



Slide the pan onto the center rack of a very hot oven - 500 degrees F. This is how it looks before you put it in the oven. It will puff up as it bakes.



Bake for 15 minutes. Remove from the oven and dot the top of the pancake with a few thin pats of butter and sprinkle with some additional cinnamon and sugar.



Return pancake to the oven and bake for another 3 minutes or until the top is brown.



Remove from oven and serve while hot. The pancake will "deflate" a bit as it cools. Don't worry, it still tastes delicious.



That's how it's done.

My friend gave me this recipe over 25 years ago and I've made it many, many times. It's a favorite in our house and I hope you'll love it too.

Here's the recipe:

GERMAN APPLE PANCAKE

2-3 apples
3-4 TBSP. butter
1 tsp. cinnamon
3-4 TBSP. sugar
3 eggs
1/2 cup flour
1/2 cup milk
Additional butter and cinnamon and sugar.

Preheat oven to 500 degrees F.

Peel, core and slice apples. Melt 3-4 TBSP. butter in a heavy iron fry pan. (The number of apples and amount of butter is dependent on the size of the apples.) Put sliced apples in the pan and fry for about 5 minutes to soften. Sprinkle with cinnamon and sugar, stir to mix. While apples are frying mix eggs, milk and flour until well blended. Pour batter over fried apples. Place on center rack in oven and bake for 15 minutes. Remove from oven and dot with thin pats of butter. Sprinkle with cinnamon and sugar to taste. Return to the oven for another 3 minutes or until the pancake is brown on top.

Remove from oven. Serve hot.

This looks like an apple pancake I've made before that you flip over onto a plate when done. And it seemed to have a lot more steps, beaten egg whites, etc. Your recipe looks like a much simpler version and just as yummy! I'm going to try it soon.
