Tales of the Mac and Cheese

Will you do me a favor? Please stop me if you've heard this story before. At this point in life I'm starting to repeat myself and my children are starting to give me that look. You know, the one that translates into any number of messages including, we've heard this a hundred times before, you're embarrassing us, or that's dumb, dumb, dumb.

Macaroni and cheese is such an iconic comfort food and I have any number of recipes for the dish. These range from basic and simple to recipes that call for $22 worth of cheeses. The expensive dish is good but come on.

When I worked at the newspaper there were always a number of young interns and recent college grads. One was a sweet young woman we'll call Cassie. She had recently been ill and was recovering from the flu. We were talking in the break room and she said, "I just want to go home and make some mac and cheese. Not the cheap stuff but the good stuff."

This got me to thinking. She was young and a recently graduated from college. I couldn't imagine college students cooking up a big batch of mac and cheese from scratch and so I asked, "What do you mean, the good stuff?"

"You know, the one that has the squeeze packet of cheese."

Oh my goodness! You can imagine my reaction.

"Look Cassie, I'm going to put together a casserole of REAL mac and cheese and we'll see what you think. OK?"

Cassie got her mac and cheese, and the recipe to go along with it. I don't know if she ever made it or not but at least I tried. Call me the Johnny Appleseed of mac and cheese.

Thanks for the link! I wondered where everyone was coming from. Guess what? I made the recipe Wednesday night...loved it! I used all American/kiddie cheese. Last night, I used a combination of cheese. Didn't like it nearly so well. I'm sticking with the kid stuff! :D

Mac and cheese is my favorite. Bob makes us a version that has $22 worth of cheese, too. Still really good!

Ever since Vee posted her recipe I've had a hanker for mac & cheese so I made some the other night...it was not a healthy version as I used sauteed onions and bacon...lol...but it was FABULOUS!

I used to always have KD in my pantry but now had not made it in years. A few weeks ago we had all our grands over for a sleepover and so I threw a couple packages together for lunch .. adding in some real cheese. I laughed when half way through the lunch. .grandgirlie asked me what it was.
Her mommy makes the real deal.

I went to a one room country school. There were 10 families and 16 kids. They mom brought hot lunches in the winter. Mostly they brought luke warm mac and cheese made with colby cheese. It was stringy and has turned me off mac and cheese for life. The only I can even eat is the kraft boxed stuff and then not very often.

That story made me laugh! I made a black forest birthday cake for my sister-in-law a few years ago - just a chocolate cake with canned cherry pie filling and (real) whipped cream. One of her friends was just so impressed that I'd made the cake from scratch and I was thinking, well how else would you make a cake?!
My children and my husband love KD. I can't stand it. Give me real mac and cheese any day!

I have the easiest receipe....
Boil your noodle in a sauce pan, when none drain noodles, put noodles back in the pan add a butter,little milk, salt and pepper and how ever much veleeta you want to add. Put heat on low to heat the milk and turn off and leave sitting. Put lid on pan and let sit till ready to serve. Then take off lid cheese will be melted and stir and serve. I love this recipe and it is as good as baked. Learned this from my mother in law.....

I made homemade mac and cheese for a family gathering over the weekend. 4 kinds of cheese, lots of prep, buttered breadcrumb topping.
Guess what the kids said? THAT'S NOT THE KIND WE LIKE, IT'S NOT ORANGE!
The adults however...loved it:)

With four kids at home I'll definitely be giving that mac-n-cheese a try. I had to laugh at the story repeating. My Dad has been doing that for years. We finally called him on it, and now he's telling the same stories only the names have been changed! Hahahahaha!

Ah, mac and cheese... comfort food for mortal man. My mom makes the REAL kind... I usually make the squeeze kind (I hate to admit that). But, I had one interaction with mac and cheese that almost made me swear off it. It was one of those times when you are trying to do three things at once and none of them go well... and a computer was involved and we know how that goes. In one evening I managed to burn three boxes of the squeeze macaroni and cheese... all that I had in the pantry... and mac and cheese would have been all that could have comforted me at that point.
Sigh. One of my Charlie Brown moments.

I am one of those odd people who never had mac and cheese growing up. I was married and in my 30's before I ever made any. It is one of my favorite foods now.
