I invite you to join in the lusciousness that is a strawberry balsalmic cupcake.
STRAWBERRY BALSALMIC CUPCAKE
2 cups strawberries
1/2 cup sugar
2 TBSP. balsalmic vinegar
4 TBSP. butter, room temp
1/2 cup sugar
1 large well beaten egg
3/4 cup all purpose flour
1/4 tsp. baking powder
1/4 tsp. baking soda
pinch of salt
2 TBSP. milk
Remove stems and cut strawberries in half. Mix the strawberries and sugar and let stand for about 15 minutes. Place in a small pan and add the balsalmic vinegar. Let simmer over medium heat for about 15 minutes. The berries will cook down and create a sauce. Remove from the heat and crush the berries if you want a smoother puree. Cool the mixture.
Beat the butter for about 30 seconds on high. Add the sugar and beat on medium high until light and fluffy, about 3 minutes. Add the egg and beat for another 30 seconds. Add baking powder, baking soda and salt plus 1/3 of the flous. Beat until combined. In a small bowl, mix 4 TBSP of the strawberry sauce with the milk. Add 1/2 of the strawberry/milk mixture to the batter and beat until combined. Add another 1/3 of the flour and combine. Add the the rest of the strawberry mixture and combine. Add the last of the flour and combine.
Distribute batter evenly in prepared muffin tins. Bake at 350 degrees for 20 minutes or until a toothpick inserted in the center comes out clean.
STRAWBERRY BALSALMIC CREAM CHEESE FROSTING
Strawberry sauce (leftover from cupcake recipe)
2 tsp. balsalmic vinegar
4 oz. cream cheese
2 TBSP. buttter
2 cups powdered sugar (or more if needed)
Mix balsalmic vinegar into leftover strawberry sauce and set aside.
Beat cream cheese and butter together at medium speed until creamy. Add 1/2 cup of the sugar and beat until combined. Add 1 TBSP. of the strawberry sauce and beat until combined. Add the remaining sugar a bit at a time and mixture till smooth. Add more sugar if necessary for good consistency. Frost cooled cupcakes and enjoy!!
Makes about 7-8 cupcakes.

That certainly sounds interesting! I do love spinach salad with strawberries and balsamic vinegar. Must try it soon ... if there are foreign strawberries available in our market ... it's WAY too early for local berries here (in the Canadian north)!
