We need to do some cooking today. Fall is here and I've decided it's time to make some pumpkin pancakes. They're delicious and filling. Let's get started.
PUMPKIN PANCAKES
1 1/4 cups flour
3 TBSP. sugar
2 tsp. baking powder
1/2 tsp. each, cinnamon and salt
pinch of cloves
1 cup milk
6 TBSP. canned pumpkin
2 TBSP. melted butter
1 egg
Combine the dry ingredients in a bowl. Mix to combine.
In a separate bowl add the egg to the milk and mix well.
Add the pumpkin and the melted butter to the milk/egg mixture and stir to combine.
Fold the wet ingredients into the flour mixture.
Fry on a griddle and serve with real maple syrup.
Oops, one got a little well done around the edges. These are good topped with sauteed apples.

Those sound and look good, it will give me something to do with the leftover pumpkin the next time I make pumpkin rolls.

Suzanne, it's great to have a simple recipe for pumpkin pancakes. Too often recipes posted get complicated by not turning to ingredients we have on the shelve. But you have given us one that is easy and filled with all the wonderful balancing spices. I am definitely going to make these over the weekend. Many thanks

I have never been one for flavored pancakes.
I don't know why....maybe because I'm afraid that it might get in the way of the taste of syrup.
I like mine a little crisp around the edges so they look perfect.

nothing says autumn like pumpkin anything! i had pumpkin pancakes over the weekend at ihop but these look much better. i will have to try them. thanks for the recipe
Looks yummy! Made me think about an invitation I received way back at age 14 or 15. I was both very shy and a farm bumpkin. To my surprise, "CD" ... one of the IN girls in my grade and daughter of a wealthy AKA snooty family ... invited me to her house for a pumpkin pancake lunch. Lunch consisted of a SINGLE pumpkin pancake, and not a particularly large one at that, with the faintest barely discernible drip of syrup. I was too shy to comment, but have wondered over the years if they always ate less than farm-sized portions! LOL!
